Two Quick and Easy Stew Recipes Your Family Will Love

The concept of 'stew' or food that is slowly cooked together in liquid can be traced back as far as the book of Genesis in the Bible, and the first known stew recipes were found in an ancient Roman cookbook. In early American colonies, poor families ate stew as a group from a common 'trencher' that was often made from stale bread which they either ate with their stew or tossed to animals when the meal was finished. The stews usually consisted of pork and any root vegetables they had, along with cabbage and corn.

Quick and Easy Turkey Sausage Stew

1 - 16 oz package of frozen stew vegetables
2 cups water
1 can tomato soup
1 lb smoked turkey sausage, sliced into ¼ inch pieces
¼ cup ketchup
2 garlic cloves, minced
½ tsp dried basil
¼ tsp pepper

In a large saucepan, combine vegetables, soup and water; bring to a boil. Reduce heat and add remaining ingredients; simmer for 30 minutes or until vegetables are tender. Serves 8.

Quick and Easy Frankfurter Stew

2 - 16 oz packages of frozen stew vegetables
½ cup diced celery
½ cup diced onion
1 ½ tsp salt
½ tsp dried thyme
¼ tsp pepper
¼ tsp garlic powder
½ cup milk
4 frankfurters (hot dogs) cut into ½ inch pieces
5 tbsp flour
5 tbsp butter, softened

In a large saucepan, combine the first seven ingredients. Cover with water and bring to a boil. Reduce heat, cover and simmer about 10 minutes until vegetables are tender. Add milk and frankfurters; bring to boil again. Blend flour and butter and add to boiling stew, stirring constantly until thickened. Serves 6.
